Lysozyme is Lysozyme chloride which is extracted from egg white. It exhibits a very high hydrolytic activity aganist Micrococcusluteus, the artificial substrate of the enzyme. It is presented as a white acidic powder, very stable in time. So it is widely used in medical, food and beverage preservation.
